Lactation Cookie Granola
I turned my lactation cookie recipe into Cookie Granola <3
Recipe
makes 3 (32 ounce) jars of granola
Ingredients:
•3 tbsp ground flax seeds
•6 tbsp water
•1/2 cup almond butter (or any other nut or seed butter like peanut butter)
•1/2 refined melted coconut oil or avocado oil
•1/3 cup pure maple syrup
•3/4 cups coconut sugar or brown sugar
•1/3 cup Brewers Yeast Powder (optional but highly recommended for extra lactation support)
•1 tsp Vanilla extract
•1/2 cup oat flour
•1/2 cup almond flour
•1 tsp baking powder
•Dash of ground cinnamon
•Generous pinch of salt
•3 cup whole rolled oats
•1/2 cup of chocolate chips
In a large bowl combine the ground flax with 6 tbsp of water. Mix and let it sit for 10 minutes. In the meantime, preheat over not 315 degrees F.
To the bowl with the flax seed mixture, add in almond butter, melted coconut oil, pure maple syrup, coconut sugar, brewers yeast and vanilla extract. Mix well to combine. Then, add in the oat flour, almond flour, baking powder, cinnamon, a generous pinch of salt and 2 cups of the oats. Mix to combine then add in the last cup of oats. Mix again to combine.
Line a large cookie tray with parchment paper then dump the granola mixture to the tray and using a spatula or your hands spread it then press it down into the baking tray to be an even thin layer. If you need to use two baking sheets to not over crowd the tray that is just fine!
Bake at for 25 mins, use a fork or spatula to break it apart into big chunks, then sprinkle over the chocolate chips and bake for another 5 minutes.
Let the granola fully cool on your counter. About 1 full hour. Store in a glass container or jar sealed tightly for best freshness.
