Tofu Scramble
I have been making and eating tofu scramble for 13 years, so I claim this is the best way to make it <3
These are my opinions to what makes a GOOD tofu scramble. My credentials is that I went vegan in 2015 … its been a long 11 years since then to learning how to cook actual good vegan dishes. lol <3
Non negotiable in tofu scramble cooking is salsa of any kind OR tomatoes.
Non negotiable in tofu scramble serving is tahini!
Recipe:
Ingredients:
2-3 tbsp oil of any kind
1/2 small white or yellow onion, diced small
1 clove of garlic, minced
1/2 container mushrooms, thinly sliced
1 tbsp butter, non dairy or regular both work
2 small tomatoes, diced
1 package firm or medium firm tofu
1/2 cup salsa, any kind- I typically use a mild-medium one
A couple handfuls or spinach or kale, chopped
salt to taste
freshly cracked pepper to taste
3 tbsp nutritional yeast
For serving:
Tahini (must)
Avocado
Cilantro
Method:
In a large pan over medium heat, add 2 tbsp oil then once hot add in onion, saute for 3 minutes then add in an additional tbsp oil and 1 tbsp butter, add in the sliced mushrooms and saute undisturbed for about 3-4 minutes to allow the mushrooms to become golden. Add in diced tomatoes and a good pinch of salt. Saute for an additional 4-5 minutes until tomatoes softened.
Once the vegetables are cooked well, add in the tofu, crumbling it with your hands into really small crumbles. Then immediately add in the salsa and mix. Cook for 4-5 minutes then add in spinach and mix again until wilted, about one minute.
Add in a good pinch of salt, freshly cracked pepper, nutritional yeast and mix again. Taste and add more salt to your liking.
Serve and drizzle tahini on top, add sliced avocado slices and fresh cilantro if you wish!
